This wine from Eric Louis is named for his great-great-grandmother Pauline, who established the family's focus on quality wine production in the 1860s. Eric follows organic and biodynamic farming practices and is certified sustainable. His wines contain a low dose of sulfur.
"Cul de Loup" refers to the name of the plot from which this wine originated (the last wolf that would have been seen on Sancerre was on this plot). It's balanced, fresh and clean with medium body and crisp acidity and a chalky finish and good length.. The mouth reveals a beautiful intensity of flavors - lime, lemon, notes of lemongrass and green apple (Granny Smith), minerals, and passion fruit. Pairs with grilled fish, poultry, veal in sauce, and creamy risotto.
